SODA BREAD
Ingredients
- 450g (11b) wholemeal flour or granary flour
- 50g bran
- 50g barley flakes
- 100g sunflower seeds or pumpkin seeds ( reserve one teaspoon for topping)
- 2 heaped tsp sea salt
- 1 heaped teaspoon baking powder
- 1 heaped teaspoon bicarbonate of soda or baking soda
- 175g low fat plain yoghurt
- 200ml warm water
- oil for greasing
Step by Step
- Preheat the oven to 190C gas mark 5
- Lightly oil flat roasting dish and place in oven
- Place the dry ingredients in a large bowl or in food processor with a dough hook
- Mix briefly, then add the yogart and water.
- Mix until well incorporated and knead for a few minutes
- When a firm but slightly lump of dough has formed shape into a ball.
- Scatter over the reserved seeds, if using, or dust with flour.
- Place on the preheated tray and bake for about 40 minutes, until golden.
- Tap the base to check that it sounds hollow and is cooked through
- Transfer to a wire rack and leave to cool for at least 30 minutes before slicing and eating
